“A Culinary Journey of Passion and Craftsmanship”
Meet Chef Eric
Born in Roanne, France, Chef Eric Vernice honed his culinary skills in a country renowned for its gastronomy. His journey began at the prestigious 3 Michelin-starred Troisgros, where he sharpened his craft. After moving to Canada in 1987, Eric worked tirelessly to establish his reputation, leading the kitchen at Relais & Chateau, Inn at Manitou, and making a name for himself as Executive Chef at Bearfoot Bistro in Whistler.
In 2002, Eric returned to Whistler with his late wife, Gillian, and their three children, opening Jayde, a beloved restaurant renowned for its quality cuisine. After its closure, he took the helm at Après, transforming it into an acclaimed fine dining destination.
In 2009, he embarked on a new adventure in the Turks and Caicos, initially overseeing the French Village at Beaches Resort, later serving as Executive Chef at Parallel 23. His dedication to culinary excellence led to the successful remodel of the Beach House Hotel and the opening of Crust Bakery, celebrated for its artisan French pastries.
In 2017, the doors to Provence by Eric officially opened as Chef Eric’s first owned restaurant in the Turks and Caicos. It introduced the first chef's table on the island, offering a unique dining experience where guests were seated around the kitchen. This immersive concept became a pivotal inspiration for his next venture, Ode to Gillian.
After crafting unforgettable dining experiences for nine successful years at Provence, Chef Eric has now closed that chapter to fully devote himself to Ode to Gillian. This intimate dining experience pays tribute to his late wife and represents a new direction in his culinary journey. Featuring a distinctive 5-course blind tasting menu and immersive cooking classes, Ode to Gillian showcases Eric's unwavering commitment to creating exceptional dining experiences that celebrate the rich flavors of his French heritage.
