Meet Chef Eric
Born in Roanne, France, Chef Eric Vernice honed his culinary skills in a country renowned for its gastronomy. His journey began at the prestigious 3 Michelin star Troisgros, where he sharpened his craft. After moving to Canada in 1987, Eric spent years establishing his reputation, including leading the kitchen at Relais & Chateau, Inn at Manitou, and capturing the attention of critics as Executive Chef at Bearfoot Bistro in Whistler.
In 2002, he returned to Whistler with his late wife, Gillian, and their three children to open Jayde, a beloved restaurant focusing on quality cuisine. Following its closure, Eric took the helm at Après, transforming it into a fine dining destination.
In 2009, he embarked on a new adventure in the Turks and Caicos, initially running the French Village at Beaches Resort, and later serving as Executive Chef at Parallel 23. His passion for culinary excellence led to the successful remodel of the Beach House Hotel and the opening of Crust Bakery, renowned for its artisan French pastries.
After eight successful years operating Provence, Chef Eric proudly presents Ode to Gillian, a tribute to his late wife and an embodiment of this new chapter in his career. With a focus on a 6-course blind tasting menu and immersive cooking classes, Ode to Gillian reflects Eric's commitment to creating exceptional dining experiences that celebrate the flavors of his French heritage.
